FOODIE FRIDAY: VEGAN VEGGIE STEW!

In an attempt to completely change my eating lifestyle, I’ve been eating vegan/vegetarian Monday-Friday, and indulge in my chicken/seafood fixes on Saturday and Sunday. Once I get enough recipes together that’s filling and can kill my meat desires, the vegan/vegetarian lifestyle will eventually become permanent.

People keep asking how I made my little veggie stew dish with butternut squash, eggplant, and chick peas earlier on this week.   So now on Friday’s, I’ll try to post whatever new recipes I’ve tried.

Let me give you a quick rundown:

Fresh seasonings: red onion, scotch bonnet pepper, bell peppers, fresh garlic cloves, tomato, thyme, crushed pimento seeds

Other seasonings: cumin, sea salt, black pepper, curry powder, red pepper flakes

Meat substitutes: butternut squash, eggplant, chick peas

Sautee the fresh seasonings in two tablespoons of olive oil for about 5 minutes, add meat substitutes, and other seasonings.  Add a little water, cover and let simmer over medium heat until tender.

Enjoy this delicious stew over jasmine rice, wild organic white rice, or quinoa.
